When dungeness crab goes on sale at the grocery store – run, don’t walk to get some! This is a special treat since dungeness crab can run upwards $30.00/lb depending on the season. It makes an impressive and perfect start to any Northwest style meal.
1 lb Dungeness crab meat
2 Tbsp mayonnaise
1 Tbsp Dijon mustard
1 whole egg
1 cup panko bread crumbs or regular dried bread crumbs
Zest and juice of 1 lemon
½ a red bell pepper, finely diced
¼ cup finely diced sweet walla walla onion
2 Tbsp chopped chives or parsley
Salt and pepper
2 Tbsp vegetable oil
1 Tbsp butter (optional)
Sweet Thai chili sauce and lemon wedges on the side
Gently squeeze all the water out of the crab meat. In a large bowl, combine all ingredients and season to taste. Adjust wetness of mixture with panko or mustard/mayo if necessary. Be careful not to overwork the mixture. Gently form small patties. Heat your oil in a large non-stick frying pan or cast iron skillet. Cook, turning once until both sides are golden brown and the crab cakes are heated through. For additional richness, add a Tbsp of butter to the oil prior to heating. Serve immediately with a sweet Thai chili sauce and lemon wedges.
