Just for the halibut! It’s spring and that means the start of the fresh Alaskan halibut season. In the Seattle area, you should start to see the price of halibut start to go down and fresh halibut will be featured on restaurant menus. This is one of our favorites to grill and my kids love it. Here is my husband teaching all important grilling techniques with our 3 year old son. You can never start too early!
We generally keep the seasonings for halibut simple to let the natural flavors of the fish shine. In a restaurant, many chefs will add a beurre blanc sauce, but at home this is not necessary. While delicious, it adds extra calories. Squeeze fresh lemon juice and fresh dill over the fish prior to serving. Here it is served with roasted broccoli and a carrot-yogurt slaw on the side. It also pairs well with a great Washington wine – Sauvignon Blanc from Chateau Ste Michelle.
