Happy St. Patrick’s Day and may your day (and year) be filled with luck! This was my first time making corned beef and cabbage and what a fun experiment it was. I simply followed the oven roasting instructions on the corned beef brisket package. It was incredibly easy. For our sides, we had roasted carrots, mashed potatoes, cabbage and collard greens sauted in butter and onions. A simple and satisfying meal.
