Heat a large non-stick skillet over medium heat. Lightly oil the skillet with a small amount of vegetable oil or Pam baking spray. Spoon approximately 2 to 3 tablespoons of batter onto the skillet for each pancake. Cook for 1 to 2 minutes or until the pancakes begin to bubble.
Then, using a spatula, flip each pancake once. Continue to cook for another 1 to 2 minutes more.
Transfer the pancakes to a platter. Continue this until all the batter is used. Keep pancakes warm in a low 200 F oven until they are all ready.
If using a cast iron mini pancake pan like mentioned in this blog post, follow the heating and cooking instructions as above. Lightly oil the whole pan including areas outside of the mini pancake depressions. Use a small off-set spatula to flip the pancakes. After first flip, leave the pancakes where they fall. Do not move them. Reapply oil or baking spray as necessary.
