Oh so delicious. These burgers will have you wanting seconds! Tangy, sweet and slightly spicy. Change up your old hamburger routine with a little kick!
Servings: 4 to 5
medium sized jalapenos
and 1/4 lb
lean ground beef
(more or less, 1 average supermarket package)
salt and pepper
To roast the jalapenos, preheat the oven to 375 F. Cut the stems off the jalapenos. Cut each one in half length-wise and remove the seeds. Place in a bowl and mix them in olive oil. Season with a sprinkling of salt. Place them on a baking tray and into the oven. Wash your hands thoroughly. Raw jalapenos are very spicy and you don’t want to get any residue into your eye by accident. After about 6-7 minutes, turn them over. Roast another 5-6 minutes. Set aside to cool. In a small food processor, add the roasted jalapenos, about 1 tsp of olive oil and a little salt and pepper. Pulse until it is chopped well. Little chunks are ok. If you don’t have a food processor, you can just finely chop the jalapenos, place into a bowl and mix in a little olive oil. At this point, you can store the jalapenos in the refrigerator for a couple days until final preparation.
In a large bowl, add the ground beef, onion, cilantro, roasted jalapeno, egg, salt and pepper and garlic (if desired). Mix all ingredients. Form ¼ lb patties and set aside ready for the grill. Grill the hamburgers until well done.
Serve topped with homemade guacamole and your favorite burger toppings such as tomato, cheddar cheese, lettuce and a pickle.
